Smoking Bishop
Ingredients:
6 oranges
2 lemons
1 finger sized piece of ginger, sliced
20 or so cloves
10 corns of allspice
2 cinnamon sticks
2 star anise pods
1.5 - 2.0 liters red wine
750 ml port (or similar)
Method:
In a small pot zest one of the oranges and one of the lemons. Add the spices, cinnamon sticks and ginger. Add about 500 ml water and bring to a boil. Simmer for an hour, adding liquid to maintain volume. Add the red wine to a large pot. Slice each of the oranges and lemons in half and add to the pot. Bring to a boil and simmer for 30 minutes. Remove the fruit, let cool for a bit and juice. Add the juice to the wine. Pour the spiced water mixture through a sieve into the wine mixture. Simmer for another 20 minutes or so. Pour all the liquid through a sieve and then add the port. Enjoy!
