Crustless Quiche (Frittata)
Ingredients:
1 onion, chopped finely
1 red pepper, chopped finely
300g frozen chopped spinach
5 eggs
400g chopped Monterey Jack cheese
75g cream (36 % fat)
1/4 tsp nutmeg
salt, pepper
Method:
Preheat oven to 350 F
Fry onion, add red pepper and continue to fry
Add spinach and reduce the liquid
Beat the eggs in a bowl and add cream.
Add cheese and mix
Add spinach, onion, red pepper and seasonings
Spoon mixture into buttered pie plate
Cook at 350 F for about 45 minutes (check and rotate at about 30 minutes)
