Chocolate Power Cookies

Wet ingredients:

1/2 cup butter

1/2 cup brown sugar

1/4 cup white sugar

3 eggs

1  teaspoon vanilla


Dry ingredients:

1 cup almond and coconut flour

1/2 cup flour ( or replace with almond and coconut flour, for gluten free)

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/3 cup cocoa powder


Add-ins:

1 cup chocolate chips

1 cup cranberries ( or raisins or barberries)

1/3 cup slivered or chopped almonds

2/3 cup chopped walnuts

1 cup oatmeal

1/3 cup flax seeds

1/3 cup pumpkin seeds

1/3 cup sunflower seeds

1/3 cup sesame seeds


Directions:

1. Combine wet ingredients.

2. Sift in dry, add dry to wet.

3. Add fillings.

4. Form into balls, with a tablespoon. 

5. Bake for 8-10 minutes, cool on a wire rack.

6. For chewier cookies, put into a container when still slightly warm.
